Simple Shrimp Gumbo


This simple shrimp gumbo will surprise and delight you because it is so easy to make. Not only is it easy, the total preparation time is cut in half half by using Roux In A Jar. But most of all it is delicious.

Roux in a jar makes cooking gumbo a simple pleasure because no longer must you cook a roux. You spoon it into your stock from a jar that you can buy and store in your pantry. I no longer cook a roux because this stuff is every bit as good as one I make and it is so much faster.

I recently made a pot and instead of serving with rice, I turned it up a few notches and made CAJUN POTATO SALAD to serve in the gumbo. Now some will scoff at the idea of putting potato salad in gumbo. But I can tell you with the utmost confidence, that this combination is absolutely delicious. You must try it for the ultimate experience in Cajun dining.


Ingredients for Simple Shrimp Gumbo


2-1/2 quarts chicken stock (low sodium)

1 Jar (pint) roux in a jar

1 large onion diced

1 red bell pepper diced

4 stalks celery diced

4 garlic cloves finely diced

3 bay leaves


1 pound andouille or lean smoked sausage sliced into rounds

3 pounds peeled shrimp tails

2 teaspoons Ragin Cajun seasoning

1/8 teaspoon red pepper flakes

1 teaspoon Tabasco Sauce

Directions

Put the chicken stock into a large heavy pot of about 5-6 quart size. Heat to a boil, reduce heat then spoon the jar roux in and stir well until completely blended into the stock. It will take a few minutes to blend the two ingredients. This will go much faster if you crumble the roux between your fingers instead of simply spooning in.

Add onion, bell pepper, celery, garlic and andouille and stir well. Cook this for 5 minutes then add Ragin Cajun Seasoning, red pepper flakes and Tabasco, stirring until blended.

Simmer on low heat for 1 hour stirring occasionally. During this stage tweak for flavor. You can add more Rajin Cajun seasoning if you want more spice and salt or add stock if you want to thin it a little.

Next add the shrimp and simmer for 15 minutes on low heat and no more. Cover and let stand until ready to serve.

Serve the Simple Shrimp Gumbo with Cajun Potato Salad for a wonderful meal.
