For the best results when making gumbo or jambalaya , cast iron cookware is always best. There is no cookware better for preparing Louisiana's favorite food than a well seasoned cast iron pot. From New Orleans to Lafayette and across Cajun country, cast iron is the choice of experienced cooks. 


No matter the food you are cooking cast iron will produce the most consistent results. The cooking qualities of cast iron can be depended on for consistency. Not even the most expensive stainless and aluminum cookware can rival the even heating, heat retention, durability and value of cast iron. Its legendary cooking performance keeps it on the list of kitchen essentials for great chefs and home kitchens alike.

We have many pieces in our home from iron skillets to large dutch ovens. My favorite for cooking gumbo is a 5 quart dutch oven given to us by my parents 3 decades ago. This old pot is well seasoned and black from the years of use and abuse but still cooks fantastic gumbo just as it did when we first brought it home. I can depend on this old cast iron pot to give even and consistent cooking qualities which makes for foolproof food preparation.

A seasoning process is used to protect bare cast iron from rust and to create a non-stick surface. Cast iron's ability to withstand and maintain very high cooking temperatures makes it a common choice for searing or frying, and it's excellent heat diffusion and retention makes it a good option for long-cooking of gumbo or any type stew. Because cast iron skillets can develop an extremely "non-stick" surface, they are also a good choice for egg dishes, particularly scrambled eggs. Cast iron skillets are best for making cornbread.
