For a quick and easy bread pudding made in your microwave this recipe
cannot be beat. In less that 15 minutes you can have a hot and very delicious authentic bread pudding cooked and sitting on your counter top ready for serving.
You will be highly impressed with the taste and texture and you will love how fast this recipe can be made.
We often make this at home when we are in a hurry. And sometimes we make it when we are not in a hurry because it is so good.
Make sure your cooking dishes are safe for microwave use.
Easy Microwave Bread Pudding
8 slices white bread torn into pieces
2 cups whole milk
1 tablespoon butter
1-1/4 cups sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup raisins
Place bread in a 9 inch microwave safe dish.
Heat milk and butter on high heat for 3 minutes in a large 4 cup microwave safe measure.
Beat the eggs then add a small amount of milk and stir well. Add eggs to the rest of the warmed milk and butter mixture then add sugar, salt, cinnamon, vanilla and raisins. Stir well.
Pour mixture over bread pieces, stir gently to distribute raisins.
Cook on high 7 minutes. Test the center for firmness. Cook an additional 2 minutes of center is soft.
To serve spoon onto dessert dish and top with rum sauce.
Bread pudding is always better with a little sweet sauce on top. We really like the rum sauce recipe that is so common in New Orleans and other parts of Louisiana.
Rum Sauce recipe
1/4 cup margarine
1/4 cup powdered sugar
2 tablespoons rum
Mix powdered sugar and rum together in a 2 cup measure (suitable for microwave). Add margarine. Cook on high 2 minutes. Stir well and serve warm over bread pudding.
