This Microwave Gumbo Recipe Tastes Like It's Made The Old Fashion WayFor a quick meal try this microwave gumbo recipe. It tastes like it's made from scratch the old fashioned way. These instructions may appear to be long but they are really not. This recipe is easy and fast. You will need the following utensils for this gumbo recipe. 4 cup glass measuring cup 5 quart casserole dish First the microwave roux Ingredients 2/3 cup flour 2/3 cup oil 2 cups onion chopped 1 cup celery chopped 1/2 cup green pepper chopped 4 cloves garlic minced 1/4 cup parsley chopped 1/4 cup green onion tops chopped 1 cup hot water Directions Mix oil and four together in the 4 cup measure and microwave on high 6 minutes. Stir at 6 minutes. Roux will not be dark enough at this point so cook another 30 seconds then stir. Cook 30 seconds longer to get the dark brown color you need. Be careful as the roux will be very hot. Usually the handle of the large measuring cup will not be hot but you should use a hot mitt just in case. Add onion, celery and bell pepper to roux and cook on high for 3 minutes. Add garlic, parsley and green onion to roux, stir and microwave two more minutes. Remove from microwave and pour off any oil that has risen to the top. Slowly add enough hot water while stirring and you will have a very good dark roux in about 12 minutes. Microwave Gumbo Recipe with Chicken and Sausage First cook the chicken with these ingredients 1 whole chicken 2-3 pounds 1 onion sliced 2 stalks celery chopped 3 cups hot water 1 teaspoon Tony Chachere's Original Creole Seasoning 1/4 white wine Directions Place chicken and all ingredients in a large enough casserole dish and cook on high for 20 minutes Remove chicken, cool and debone. Reserve stock. Assemble and cook gumbo with these final ingredients 4 cups hot water 3 cup chicken stock 1 teaspoon Tony Chachere's Original Creole Seasoning

1 pound sausage cut into slices Directions Place roux in a 5 quart casserole with hot water, stock and seasonings. Cook on high 10 minutes. Add chicken and sausage. Cook on high for 10 minutes Serve over cooked rice. This will make a wonderful chicken and sausage gumbo ready to serve in under 1 hour. Return to Easy Gumbo Recipes page
