Vegetable lovers will adore this Okra Tomato Gumbo. It is simple and fast yet very delicious.

It will make a great meal on it's own and satisfy vegetarians who seem to always be hungry after eating.

Try this as an appetizer before the main course. Your family and guests will compliment you.


Okra and Tomato Gumbo

"Ingredients"

2 tablespoons butter

1 cup chopped onions

1 cup chopped green pepper

1 cup chopped celery

1 cup chopped tomatoes

1 cup sliced okra

1 cup chicken stock

1/4 teaspoon oregano

1/4 teaspoon salt

1 clove garlic diced

1 bay leaf

1 pinch of black pepper and red pepper


Directions

Melt butter in a heavy pot, stir in onions, peppers, celery, and garlic. Cook on medium heat until soft.

Add remaining ingredients and stir gently. Cook over low heat until thick, stirring often.

This will serve 4 main courses or 8-10 appetizer portions.

Serve with toasted whole wheat wedges.
